We realize that GOOD gluten-free recipes can be hard to find! As such, we invite you to email your favourite, proven, gluten-free recipes to us to post on our website. Here's a great one to get us started:
6 large eggs
1 1/2 cups hazelnuts (filberts)
1 cup granulated sugar
1/2 cup semi-sweet chocolate chips
4 tsp. baking powder
1 tsp. vanilla
1/4 tsp. salt
Cake: Preheat oven to 350. Place all ingredients in a blender. Blend for 3-5 minutes. Pour into 2 greased and waxed paper lined 8 inch round pans. Bake until toothpick comes out clean, about 25 minutes. Cool.
2 Tbsp. hard margarine (softened)
1 cup icing sugar
1 tsp. cocoa, sifted
1/2 tsp. vanilla
2 Tbsp. strong coffee
Beat margarine, icing surgar, cocoa, vanilla and coffee together well in a small bowl. Remove one cake layer, top side up, to plate. Spread with filling. Set second layer over filling, top up.
Mocha Fluff Icing:
1 envelope dessert topping
1/2 cup milk
1 Tbsp. instant coffee (crushed to powder)
1 Tbsp. cocoa
Mix topping, milk and coffee until stiff then add cocoa, beat well. Ice cake.
